Really, it's the last day?? (Sweet and Sour Chicken)

Vacations from work go by way to fast..  I have had a wonderful 4 days already and I am sure today is going to be wonderful too..   Making the child Chinese Food..  what she asked for,  if it is one thing this Mama does,  she cooks what her children want on their b'day..   I used to take them out for dinner and they wanted me to cook instead..  ahh..  such spoiled kids..   my kids when they were young thought fast food was a punishment..   so freaking funny..    I could threaten them with fast food if they were behaving badly..  lol..
We had a surprise visit today by an old friend..   It was good to see Heather..  thanks for coming by hon..  take care of yourself!!!!
So I showered,  got dressed in comfy stay at home clothes and did my hair..  thinking it is going to be a makeup free day..  my face needs to breath a little anyway..
So the girls, Nik and I got hooked on words with friends last night and we have now gotten my son Carey involved too..  lol..   it is so addictive..  lol..  I need to get in the kitchen and start cooking dinner..  I have to cut up a couple fresh pineapples..  yummy...  cut up the peppers and get to cooking..  I finally did..  after my sons got here..  :) 














Sweet and Sour Chicken

for the chicken
3 to 6 boneless, skinless chicken breast cut into 1 inch pieces
2 eggs
2 tbsp cornstarch
2 tsp low sodium soy sauce
1 tsp salt
pepper

Mix all together in a bowl and place in fridge overnight or for at least a couple hours..

1 c all purpose flour
1 c water
1/2 c cornstarch
2 tbsp vegetable oil
1 tsp salt
1 tsp baking soda

Add the the chicken mixture and stir well..   Heat vegetable or peanut oil in a heavy skillet or large saucepan or wok to 375 degrees and fry the chicken a few pieces at a time until light golden brown,  remove to a paper towel lined plate.. continue until all the chicken is cooked..  then add all the chicken back and cook an additional 3 to 5 minutes until crispy and golden.  keep warm..

Sweet and Sour sauce

2 1/2 c sugar
2 c chicken broth
1 1/2 c white vinegar
2 tbsp vege oil
1 tbsp soy sauce
2 cloves garlic, chopped
1/2 c cornstarch
1/2 c cold water

canned or fresh pineapple
1 green and red bell pepper or your fav combination

Mix the sauce ingredients except the cornstarch, water, pineapple and bell pepper.. pour into large saucepan and cook for about 10 minutes over medium heat bringing to a slight boil..  mix the water and cornstarch and pour into the sauce..  stir until thickened and clear.. add the pineapple and bell pepper and cook for 2 to 3 minutes..

I serve this over rice and I get the sauce ready while the oil is heating up for the chicken..  then all I have to do is cook it at the very end.. it doesn't take to long..  you can half this recipe easily..  So very yummy...

So after we gorged ourselves on the sweet and sour chicken we watched some documentary on tv and then it was pie and cheesecake time..  both hits..  they think I should auction off the pie too..  lol..  I love my crazy kids..  :)
