Wonderful Sunny Sunday!!!! (Turkey Parmesan Meatballs with Spicy Tomato Sauce over Pasta)

It has been a wonderful few days off work and I am so very happy right now..  Things are slowly falling into place.. Can't wait to get into my new home and make it mine.. can't wait to cook in the kitchen for the first time..  :)  Can't wait to do all the first that you do in a new home..  Decided to make a late lunch/early dinner tonight..  made some yummy Turkey Parmesan Meatballs and they are baking in the oven and the sauce is simmering happily on the stove..  It's going to be delish..  :) 






Turkey Parmesan Meatballs

3/4 c Italian Breadcrumbs
1/2 to 1 c grated Parmesan Cheese
1 lb ground Turkey
garlic powder
Italian Seasoning
1/4 c tomato sauce

Mix all together into a bowl and form into 1 inch ball and place on a greased sheetpan and bake in a 350 degree oven for 30 to 45 minutes until done.. 










Spicy Tomato Sauce

Olive oil
1 onion, chopped
1/2 green and yellow bell pepper, chopped
4 oz baby bella mushrooms, sliced
4 garlic cloves, minced
1 28 oz can crushed tomatoes
1 28 oz can water
1 14 oz can diced tomatoes with jalapenos and lime
salt 
pepper
Italian Seasoning
Garlic Powder
12 to 16 oz pasta, cooked according to pkg directions and drained

In a large saucepan heat oil,  cook the onions for a couple minutes,  add the peppers, cook another 2 minutes,  add the mushrooms and garlic,  cook 2 minutes.  add the seasonings and then add the crushed tomatoes, the water and the diced tomatoes,  bring to a boil,  reduce heat and simmer for 30 to 45 minutes..  Serve over pasta and topped with meatballs and parmesan cheese

Loving Life!!!! (Banana Bread)

What a glorious day!!!  Love life right now,  God is blessing me so much and I am so very happy!!!  He has blessed me with allowing us to do a lease/purchase on a home..   What a wonderful blessing.. we will celebrate Thanksgiving and Christmas in our new home..  so exciting..
I got to spend another glorious day with my granddaughter..  she is so very precious..  grandkids,  they are so very special..  love her so very much..  we made Banana Bread today..  :)




Banana Bread

3 ripe bananas, mashed
1/3 c applesauce or oil
1 c sugar
1 egg
1 tsp vanilla
1 1/2 c all-purpose flour
1 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon

Mix the first 5 ingredients together,  add the flour, baking soda, baking powder, salt and cinnamon in and mix well..  pour into a greased loaf pan and bake in a 350 degree oven for 45 minutes to an hour..  cool,  remove from pan and enjoy..

Sunday!!! {Pumpkin Chili)

What a day,  very busy,  seemed  like it was more busy than yesterday..  Glad the weekend is over..  2 more days then 5 glorious days off..  we were going to go to Savannah,  but because we are in the process of doing a lease/purchase on a house we are hanging around home and hopefully we will hear soon if the owner agree's to our terms..  I am praying and claiming God's will in the situation..  :)  I came home to the sweetest little face today..  totally made my day..  She is the sweetest and smartest child ever..  she saw my nails and Rebekah and I had to paint hers.. so cute,  then she had to go and show everyone her pretty nails..  Can't get enough of her..  I decided to make Pumpkin Chili..  It smells yummy!!!



















Pumpkin Chili

1 lb ground turkey
1 onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
4 cloves garlic, minced
pinch red pepper flakes
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can Cannolini beans, drained and rinsed
1 (8 ounce) can tomato sauce
1 (4 ounce) can tomato sauce with garlic and onions
2 (14.5 ounce) cans petite diced tomatoes
1 (14.5 ounce) can fire roasted diced tomatoes
1 (15 ounce) can pumpkin puree
2 teaspoons pumpkin pie spice
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon salt, or to taste

In a large saucepan heat olive oil,  add the ground turkey and cook until done.. add the onion and peppers,  cook 5 to 7 minutes.. add the garlic and cook another 2 minutes..  add the red pepper flakes,  the tomato sauces, petite diced tomatoes, fire roasted tomatoes,  stir well,  add the pumpkin and stir..  add the drained and rinsed beans and all the spices..  stir well and bring to a boil,  reduce heat and simmer for 1 1/2 to 2 hours.

Friday!!! (Pear Cobbler)

So today was an odd day at work..  I am not quite sure what it was that made it so odd,  but it was..  set some sales planners in cosmetics,  ran back and forth between cosmetics and jewelry and basically didn't get much of anything done..  Came home and crashed for a little while and then walked into the kitchen to try and figure out what to cook for dinner..  Then I noticed the pears that were getting ripe so looked up recipe's using pears and came up with Pear Cobbler,  so decided to try it..  It was easy to make and smelled really good cooking..  I also decided to make Teriyaki Rib Eye Steaks, Baked Sweet and Idaho potatoes, Steamed Broccoli and Salad..




Pear Cobbler

2 to 2 1/2 cups sliced pears
1/2 t0 3/4 c sugar

In a medium bowl add the sugar to the pears and set aside

1/2 stick butter
3/4 c all purpose flour
1 c sugar
2 tsp baking powder
1 tsp cinnamon
3/4 c milk
1 egg

In a casserole dish place the butter and put in a 325 degree oven to melt,  while that is melting mix the flour, sugar, baking powder and cinnamon in a bowl,  add the milk and egg and mix well,  pour over the melted butter,  spoon the pears over the top and bake in the 325 degree oven for about 30 to 45 minutes.

Terrific Tuesday!!!! (Caesar Baked Chicken, Sauteed Onions, Peppers, Mushrooms and Green Beans)

Another fabulous Tuesday,  was a pretty good day at work,  was able to spend a good amt of time in Cosmetics making it gorgeous again..  But kept hearing people saying,  well at Wal-Mart..  I felt like looking at them and saying..  you're not in Kansas anymore people..  you're in TARGET!!!  We are not Wal-Mart,  we don't want to be Wal-Mart..   but I kept my mouth shut,  which sometimes is so very hard for me to do..  :) 
I came home and crashed for a bit and then headed into the kitchen to make dinner..  I decided at the last minute to try a new recipe..


Caesar Baked Chicken

4 boneless, skinless chicken breast
plain breadcrumbs
garlic powder, paprika, Italian Seasoning, salt and pepper
1 can tomato soup
1/3 to 1/2 c Caesar Salad Dressing.
4 oz mozzarella cheese, shredded
2 oz parmesan cheese, shredded

Wash chicken and pat dry,  in a large place or shallow bowl pour in some breadcrumbs and season with the garlic powder, paprika, Italian Seasoning, salt and peppers,  dredge the chicken in it and place in a 9x13 and bake in a 350 degree oven for 30 to 45 minutes.. mix the tomato soup and Caesar dressing in a bowl,  pour over the chicken and sprinkle with the cheese,  return to oven and bake another 5 minutes. 


Sauteed Onions, Peppers, Mushrooms,  Green Beans

1 onion, sliced
1 green pepper, sliced
1 8oz pkg baby bella mushrooms, sliced
3 garlic cloves, minced
1 lb fresh green beans

Worcestershire Sauce
salt and pepper

In a large sauce pan heat some olive oil,  add the onions and cook about a minute,  add the peppers and cook another 3 minutes,  add the garlic and mushrooms,  cook about 2 minutes,  add the green beans and salt and pepper,  add some Worcestershire Sauce and cook for about 15 minutes.
