Back to the Grindstone!! (Orange, Ginger Chicken with Noodles and Vegetables)

I had a wonderful weekend..  Spend Friday night with my daughters and a friend from work watching old movies and eating yummy pizza..  Saturday was spend with the most gorgeous 2 yr old on the planet..  she reminds me so much of all my children rolled into one..  She is smart, funny, fearless and sweet..   She loved having her party at The Bounce House in Canton..  really cute place and a lot of fun..  at first she didn't like the big slide,  but after a while she didn't want to stop.. just watching her run around on her tiptoes made my day..  she wasn't into cake or presents..  she wanted to play..  and after she played that whole time I am sure she slept real good that night..  I got in one of the inflatables with her and wow..  that crap jars the body..  my neck and shoulders..  ouch!!!   getting old stinks..  :) Then the girls and I enjoyed some Chinese Food at our favorite place.. Sunday I took it easy..  well.. ok I cleaned, did laundry and made the dogs some homemade dog food..  they are so spoiled..  but they LOVE it.. lol..  and I know it is so much better than what I was buying them,  even though I was buying the Iams Naturals..  it's not really that good for them..  I have been doing quite a bit of reading..  it isn't pleasant..  and I know now that what they are eating is real/whole food.. not by products or ground up unknowns..  :) 
For dinner tonight I decided to try a new recipe..  

Orange, Ginger, Chicken with Noodles and Vegetables

1 pkg whole wheat linguini, cooked according to pkg directions
olive oil
1 onion, sliced
2 cloves garlic, minced
2 boneless, skinless chicken breast,  cut into 1 inch pieces
Orange, Ginger Sauce( I bought mine this time,  next time I think I will make it)
2 pkgs stir fry vegetables

In a large skillet heat the olive oil,  add the onion and cook for about 3 minutes,  add the chicken breast and the garlic,  cook until the chicken is cooked through,  add half the jar of Orange, Ginger sauce,  cook for about 5 minutes,  add the vegetables,  the rest of the sauce and rinse the jar out with about 1/4 c water.. add and saute the vegetables until crisp/tender..  add the cooked noodles and mix well..  it is yummy,  but there was something in that sauce.. probably the sodium content that made me extremely ill..   so that is why next time I will make the sauce..

I Love Rain!!! (Butterflies with Italian Sausage, Mushrooms and Peas, Brownies Ala Mode)

What an amazing day!!!  Got to spend some time in the sun enjoying the pool,  got so spend time with Erica and Rachel and even got to spend time with my kindle.. 
I got to talk to a very wonderful friend for a little while,  this lady is so very special and her family is dealing with so much right now,  but she still has such great faith..  I love her so much and am so thankful that God put her in my life..  Hopefully we can meet for coffee soon..  :)  

So for dinner tonight I made Butterflies with Italian Sausage, Mushrooms and Peas  and for dessert,  Brownies ala mode..  yummmmmmyyyyy

Bowties with Italian Sausage, Mushrooms and Peas

1 pkg bowtie pasta, cooked according to pkg directions
1/2 lb Italian Sausage( I use hot Turkey Italian sausage)
olive oil
1 onion, chopped
3 cloves garlic, minced
8 oz mushrooms, sliced
2 c green peas, frozen
parmesan cheese

In a large skillet heat oil and add the onion,  cook for about 5 minutes,  add the Italian sausage and cook until done,  then add the garlic and mushrooms,  cook until the mushrooms are tender and dark.  add the green peas and cook until defrosted..  Mix with the pasta and toss with parmesan cheese..   so yummy

Brownie ala mode

4 eggs
2 cups sugar
1 c butter, melted
1/2 c cocoa
1 1/4 c flour
1 tsp vanilla
1 c chocolate chips, melted with a splash of whipping cream


mix in a large bowl until ribbons form,  add the butter and vanilla and mix well..  then add the cocoa and melted chocolate,  mix well.  add the flour and stir with a wooden spoon until all incorporated.  Pour into a greased 9x13 pan and bake in a 350 degree oven for 25 minutes..  

Vanilla Ice Cream
Hot Fudge Sauce

Cool the brownies a little bit and cut into squares,  put on a plate,  top with a scoop of ice cream and pour the hot fudge sauce over the top..  Yummy!!!!

Happy Father's Day!!!! (Cajun Shrimp Fettuchini Alfredo)

Today is a day that we celebrate dad!!!  I want to thank all the men that have stepped up and have been a fabulous dad to their own children and to those that weren't theirs..  Those are the best types of dads..  the ones that can love children that other men may have created..  My children are blessed with a good dad and for that I am so thankful..  I myself wasn't that lucky..  so I know the damage that it can do to have a father in your life who doesn't care about his children..  it is hard,  and by the time he did start caring,  I was over it..  You can't treat a child with neglect and disgust for 17 years of their life and then all of a sudden decide that you want to be part of their life..   just doesn't work that way..   I lived next door to a wonderful family while growing up and their dad is still to this day a wonderful man..  I had a few glimpses of what a good father was growing up,  just never knew that security and love from my own,  ever..  So, if you have been blessed with a Dad who has been there for you,  loved you,  talked to you, laughed with you and cared enough to discipline you;  Thank him..  because the alternative is a very sad and lonely place to be..

Cajun Shrimp Fettuchini Alfredo

16 oz fettuchini, cooked according to pkg directions
1/2 lb shrimp
2 tbsp butter
olive oil
4 cloves garlic, minced
1 c heavy whipping cream
1 c parmesan cheese, shredded
Cajun Seasoning

Heat oil in skillet over low heat,  add the garlic and cook for about 8 minutes..   Put the 1 c whipping cream and the 2 tbsp butter in a small saucepan and heat over low heat, add some black pepper.. after the garlic cooks about 8  minutes,  stir in the shrimp and cajun seasoning,  cook until the shrimp is pink..  add the fettuchini noodles and more cajun seasoning.. add cheese to the cream and stir until melted,  pour over the fettuchini and toss to coat..  sprinkle with more parmesan cheese,  serve with a green salad and crusty bread...

Change of Attitude!!! (Macaroni and Cheese, Fresh Green Beans, Sauteed Summer Squash, Fried Eggplant)

It is amazing how you can change your attitude about things and remove all drama from your life and things just start falling into place..  I have decided that my life is going to be all positive,  nothing negative is allowed..  I actually love my job..  I love spending time in cosmetics and I love spending time in Jewelry and Accessories..  every time I pick something up or put it back where it goes,  I remind myself that it is job security..  my goal every day is to be the best I can be,  do the very best to my ability,  have fun with my family of co-workers who I love to pieces and give thanks to God for all my blessings...  when you start focusing on positive things,  then the negative starts flowing away.. and I love that.
So for dinner tonight I am making a complete vegetarian meal..  I miss being a complete vegetarian a lot and think about going back to that lifestyle..  not that we really eat a lot of meat..  we eat Chicken and Turkey..  very very little beef and hardly any pork..   I love cooking new things,  but there is nothing more satisfying than cooking fresh vegetables in the summer time..  :)

Macaroni and Cheese

1 16 oz box
6 tbsp olive oil
2 tbsp butter
hot sauce
salt and pepper
8 tbsp flour
8 c milk(I use skim)
8 oz cheddar cheese, shredded(I use the 2%)
8 oz hot pepper cheese, shredded
4 oz mozzarella, shredded

Cook pasta according to pkg directions..  In a large saucepan heat oil and add butter,  add the flour and stir well, add the hot sauce and salt and pepper.  Let cook about 2 minutes.. slowly add the milk, stirring constantly.. cook on a medium low heat until starting to thicken and then add the cheeses,  cook for another few minutes..  drain the pasta and add to the saucepan.. stir well and then pour into a large caking pan..  I like my sauce thin to start with because it thickens  up in the oven..  bake in a 350 degree oven for about an hour.. 

Green Beans

2 lbs fresh green beans trimmed and cut into 1 to 1 1/2 inch pieces
water
salt
pepper
butter
sugar

Add the beans to a saucepan with 2 inches of water simmering,  add the salt, pepper, 2 tbsp butter and 1 to 2 tsp sugar..  let cook until most of the water cooks out..

Steamed Squash

2 lbs squash, sliced
water
salt
pepper
butter
sugar

In a saucepan add the squash,  pour about 1/3 c water over the squash,  add the salt, pepper, 1 tbsp butter and about 2 tsp sugar.. cook until the squash is falling apart.

Fried Eggplant

2 Eggplant, sliced in 1 inch slices
flour
salt
pepper

In a large skillet add olive oil and heat,  salt the eggplant and the put salt and pepper in the flour,  dredge the eggplant in the seasoned flour mixture and put in the hot oil,  cook for about 5 minutes on each side..  remove to a plate and continue cooking until all is done..

It's Friday!!! (Texas Cheese Fries)

Friday finally got here,  but it doesn't really matter much to me.. I am working all weekend.. at least I am not closing..  opening is bad enough,  but closing is the worst..  at least on my body...  it takes a beating..  I have been able to spend more time with my sons lately and it makes me very happy.. I love when they ask if there are leftovers and come eat dinner with me and we get to talk..
Being a parent is one of the hardest and most rewarding things I have ever done in my life..  I absolutely loved watching my babies growing up..   hard, yes,  but oh so rewarding when you see them being responsible adults..   I love having conversations with them and realizing that wow,  all those days and nights that I agonized over whether I was doing a good job, doing the right thing, teaching them right from wrong etc.. paid off..  that they are all good people with a heart for others and that they don't feel like the world owes them anything..  they are my greatest accomplishment..  I am proud of each and every one of them..

While driving to work this morning as I realized that I forgot my yogurt I was going through the contents of the pantry/fridge and thought,  I think I will make Texas Cheese Fries for dinner.. I have everything..  yummy!!!!  I love these things, and they are basically fool proof..  potatoes, bacon, cheese, jalapenos and ranch dipping sauce..  mmmmmm


Texas Cheese Fries

8 to 10 potatoes sliced 1/2 inch thick and then julienned
olive oil
salt
pepper
garlic
chili powder
paprika
steak seasoning
cajun seasoning
Mix all together in a large bowl and spread on a large rimmed baking pan and bake in a 400 degree oven for about 30 to 45 minutes

Bacon, cooked and crumbled
Cheddar cheese, shredded
Jalapenos

sprinkle hot fries with the cheese, bacon and jalapenos.. serve with ranch on the side as a
 dipping sauce..   so very yummy!!!!

I am making this cheesecake for my friend Kim who is hosting a dinner Monday evening and she asked if I would make one for her..  of course I said yes..  :) 


Strawberry Swirl Cheesecake

Strawberry Sauce
16 oz strawberries,  fresh or frozen, sliced or chopped
1/2 c sugar
1 tbsp cornstarch
4 tbsp water

Put the strawberries and sugar in a saucepan,   heat over medium heat until the strawberries start to break down..run through the blender and put back in the pan..  reduce heat and stir the cornstarch in with the water.. add to the strawberries and cook until thick..   remove from heat and cool..  store in the refrigerator..
(Be very careful when you run this through the blender,  cause it can sort of spew out of the blender and go all over you and everything around it..  and it is HOT!!!!)


Crust
1 sleeve graham crackers, crushed
1 stick butter, melted


Mix together and press into bottom of a 10 inch springform pan.. bake in a 350 degree oven for 10 minutes..


Cheesecake
3 8oz pkg cream cheese
1 c sugar
3 eggs
1 tsp vanilla
1 16oz container sour cream

place the cream cheese in a large mixing bowl and beat until soft and creamy,  add the sugar and mix for about 5 minutes..  add the eggs 1 at a time mixing well after each one,  then add the vanilla,  mix and then add the sour cream..  mix well and then pour into the prepared pan..place 5 to 6 spoons of the strawberry sauce on top of the cheesecake and run a knife through it making a marbled design..   bake in a 325 degree oven for 1 hour to 1 hour 15 minutes.. until set..  turn off oven and crack open the door and let sit for another hour and then remove to counter to further cool..  Decorate with whole strawberries and the remainder of the sauce heated in the microwave and brushed over the strawberries..

Love My Wednesday's!!!!! (Red Beans and Rice, Ravioli Bake, Pineapple Upside Down Cake)

What a fabulous day!!!  Hung out at the pool with my beautiful girls for a few hours and loved it.. nothing relaxes me more than being in the pool and lying in the sun..  I am getting so dark and am LOVING IT!!!  Then we came home and I showered and got ready to meet my friend Kim at Chili's for a late lunch.. Hello Tropical Sunrise Margarita!!!!  I freaking love you!!!  It is so very yummy..  I highly recommend it for all you Margarita drinkers..  :)  Had a lovely lunch with Kim..  She is such a wonderful person and I am very thankful she is back in my life..  it has been a wonderful day off..  very restful and relaxing..  getting ready for my 6 day stretch..  they are all opens though so I lucked out.. the closings are tough...  my body hates closings..
Monday I put some dark red kidney beans in the crockpot to cook for red beans and rice.. I love red beans and rice so very much..  :)   Then yesterday morning I finished the prep for the red beans and rice and got it going in the crockpot..  the smell when I got home was fabulous..  I cooked the rice in my wonderful rice cooker..  I need a bigger one..  and then mixed it in with the bean mixture in the crockpot..  yummy.. 
Tonight the girls(Rebekah) are cooking for their dad.. his b'day is tomorrow so it is dinner and dessert for dad..  Rebekah made a Pineapple Upside Down cake last night and Ravioli Bake after we got home from the pool..  It smells yummy in here.. 

Red Beans and Rice

4 cans or 1 bag dried beans cooked.. rinsed and drained...

1 can diced tomatoes, undrained
1 package (14 ounces) smoked turkey sausage, sliced
1 cup chicken broth
3 celery ribs, chopped
1 large onion, chopped
1 medium green pepper, chopped
1 small sweet red pepper, chopped
6 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
Hot cooked rice


Place all the ingredients but the rice in the crockpot and set on low and cook all day..  cook rice and you can either mix it in with the beans or serve the beans over the rice..  it was fabulous.. you can also add some hot sauce to the crockpot too..  I like some heat.. :)

Ravioli Bake

peppers, chopped
onions, chopped
garlic, chopped
olive oil
1 can or jar spaghetti sauce
1 large can crushed tomatoes
Italian seasonings..
2 pkg frozen cheese Ravioli
Mozzarella cheese
parmesan cheese..

In a saucepan heat the oil and add the peppers, onions and garlic,  let cook about 5 minutes,  add the sauce and crushed tomatoes, rinsing the cans out with a little cool water..  add to the pan,  add some seasoning and let simmer for about an hour.. 
put a couple ladles of sauce in the bottom of a 9x13 pan, lay the ravioli over and sprinkle with cheese.. repeat the sauce, ravioli and cheese until ravioli is gone..  bake in a 350 degree oven for about 45 minutes to an hour..  yummy..

Pineapple Upside Down Cake

butter
brown sugar
sliced pineapple, drained, reserving juice
yellow cake mix
oil
eggs

Melt about 1/3 to 1/2 cup butter in bottom of a 9x13 dish..  add about 1 to 1 1/2 c brown sugar and stir well..  lay in the pineapple slices..  make cake according to pkg directions substituting juice for the water..   pour over pineapple in the pan and bake in a 350 degree oven for about 35 to 40 minutes.. testing with a skewer or toothpick...  let cool and remove from pan..

Slowing Down!!! (Asian Firecracker Chicken Stir-Fry)

What a crazy busy day at work.. felt like I was going 100mph all day,  but it wasn't a bad day..  was able to keep up until I had to be on the register for most of the afternoon..  left work, came home and talked to Saundra for a few minutes then showered and took her to work,  came home and cleaned the kitchen(yes,  I am still having to clean the kitchen constantly)and started dinner..  Asian Firecracker Chicken Stir-Fry...  mmmmm


Asian Firecracker Chicken Stir-Fry

3 Chicken breast, sliced
olive oil
Toasted Asian Sesame Dressing
Red pepper flakes
1 onion, sliced
1/2 green, red and yellow pepper, sliced
2 pkgs sugar snap peas
1 can sliced water chestnuts
Toasted Asian Sesame Dressing
cooked white or brown rice

In a large skillet heat oil and cook the chicken until almost done and then add about 1/2 c of the dressing and the red pepper flakes and finish cooking.. remove from the skillet and add the vegetables and cook for about 5 minutes,  add another 1/2 c dressing and some more red pepper flakes and cook another 2 minutes.. add the chicken back and stir well.. cook an additional 2 minutes and serve over the rice..  yummy!!!!

Sunday Already!! (Asiago Bread, Chicken Mushroom Subs)

Why do weekends off go by so fast??  I am not ready for tomorrow to be Monday.. NOOOO!!!  I am taking it easy today..  my definition of taking it easy.. making bread.. I think there is something seriously wrong with me..  though I have to be honest and say that it is hard for me to cook in the summer time.. I want to be out doing something fun..  but sometimes I just have to get into the kitchen and make something..   and that was today... :)







Asiago Bread

4 c warm water
8 tbsp sugar
4 tbsp yeast
4 tbsp butter, melted
4 tsp salt
7 to 10 cups flour ( I used 2 c. whole wheat flour and the rest all purpose)
Asiago Cheese

Put 1 c water, the sugar and yeast in a large bowl or the bowl of your kitchenaid mixer.  Let sit until doubled in size.. 5 to 10 minutes.   add the melted butter, the 3 c. water, salt and 2 c. of flour.  mix together and then add flour 2 c. at a time and mix well after each addition,  keep adding the flour until a soft dough forms.   put flour on a clean surface and turn dough out onto the flour and knead for 2 to 5 minutes until no longer sticky.   form into a ball and then cover with a clean towel and let sit 15 minutes.   after it sits,  cut the dough into 4  to 8 pieces and then form each piece into a demi loaf of bread, place on greased pan, brush with olive oil and press asiago cheese into the top    and let rise until doubled.. 30 to 45 minutes..  then bake in a 350 degree oven for 20 to 30  minutes until
golden brown.  use for sandwiches, subs, hoagies,. etc..






Chicken Mushroom Pepper Swiss Subs


Olive Oil

1 onion, sliced
1/2 green, red and yellow,. sliced
1 8oz pkg mushrooms, sliced
3 cloves garlic, minced
2 chicken breast, cubed
1/2 c Italian Salad dressing
sliced Swiss Cheese
Loaf of Italian or French Bread


In a large skillet heat oil,  add the onions and peppers and cook a couple minutes,  add the mushrooms and garlic and cook 1 minute..  add the chicken breast and salad dressing and cook until done..  Slice the bread lengthwise all the way down..  put swiss slices on the bottom of the bread,  add the filling and top with more swiss cheese.. top with the top of the bread, wrap in foil and bake for 15 minutes..  so soft and yummy..

Wonderful Saturday!!! (Turkey and Black Bean Taco's, Spanish Rice)

I got up and took Rebekah to work this morning and then came home and cleaned my room and my fan.. oh boy was it nasty... hung up some clothes,  put up my scarves for the summer/fall and took the sheets off my bed and washed them..   still have to put them back on.. but I have time..  then Saundra and I went and enjoyed a little time at the pool,  came home and showered and I got dressed to do a little shopping and then we came home,  put the food up and chilled for a bit then I took Saundra to work and we stopped and picked up Freon at the auto parts store..  got hit on and then left..  went and got the ac fixed and came home and cooked a very yummy dinner and now I am just chilling again..  I got a good amt of sun today and I am getting darker and darker..  but there is a line..  we saw this woman at the beach Wednesday..  ewwww..  she was to dark.. her skin looked like leather..    so I am going to take it nice and slow.. plus my work schedule doesn't allow for a lot of beach/pool time..  so I get what I can when I can..  nothing relaxes me more than being at either the beach or pool..  :) 

So for dinner I made yummy Turkey and Black Bean Taco's with Homemade Spanish Rice.. it was so yummy and super easy and pretty frugal.. especially if you are like me and buy Ground Turkey and or Ground Turkey Breast when it is on special and throw it in the freezer immediately.. 

Turkey and Black Bean Taco's

18 to 20 oz ground Turkey.. I used the 85/15 ratio.. but there wasn't any fat in it at all..
1 pkg taco seasoning.. low sodium if you can find it
salsa
1 can black beans, drained and rinsed..

In a large skillet brown the Turkey,  add the taco seasoning and about 1/4 c water..  cook for a couple minutes.. reduce heat and stir in about 2 c salsa and the drained black beans.. let simmer for about 30 minutes.. serve on soft taco shells with lettuce, tomatoes, and reduced fat cheese..

Spanish Rice

1 onion, chopped
olive oil
1 c rice
1 c salsa
1 c water

In a saucepan heat olive oil and saute the onion about 5 minutes..  add the rice and cook for 2 minutes.. add the salsa and water and bring to a boil, stir, reduce heat and cover.. cook 20 to 25 minutes.. do not stir..  fluff with fork before serving..
