Happy Father's Day!!!! (Cajun Shrimp Fettuchini Alfredo)

Today is a day that we celebrate dad!!!  I want to thank all the men that have stepped up and have been a fabulous dad to their own children and to those that weren't theirs..  Those are the best types of dads..  the ones that can love children that other men may have created..  My children are blessed with a good dad and for that I am so thankful..  I myself wasn't that lucky..  so I know the damage that it can do to have a father in your life who doesn't care about his children..  it is hard,  and by the time he did start caring,  I was over it..  You can't treat a child with neglect and disgust for 17 years of their life and then all of a sudden decide that you want to be part of their life..   just doesn't work that way..   I lived next door to a wonderful family while growing up and their dad is still to this day a wonderful man..  I had a few glimpses of what a good father was growing up,  just never knew that security and love from my own,  ever..  So, if you have been blessed with a Dad who has been there for you,  loved you,  talked to you, laughed with you and cared enough to discipline you;  Thank him..  because the alternative is a very sad and lonely place to be..

Cajun Shrimp Fettuchini Alfredo

16 oz fettuchini, cooked according to pkg directions
1/2 lb shrimp
2 tbsp butter
olive oil
4 cloves garlic, minced
1 c heavy whipping cream
1 c parmesan cheese, shredded
Cajun Seasoning

Heat oil in skillet over low heat,  add the garlic and cook for about 8 minutes..   Put the 1 c whipping cream and the 2 tbsp butter in a small saucepan and heat over low heat, add some black pepper.. after the garlic cooks about 8  minutes,  stir in the shrimp and cajun seasoning,  cook until the shrimp is pink..  add the fettuchini noodles and more cajun seasoning.. add cheese to the cream and stir until melted,  pour over the fettuchini and toss to coat..  sprinkle with more parmesan cheese,  serve with a green salad and crusty bread...
