Cookies with Sam!!! (Oatmeal Cranberry White Chocolate Cookies)

I got the best phone call from my son last night telling me that he and Sam would be spending the day with us..  We have been having a wonderful time with her..  She is so precious.. love of my life..  smart, funny and so well behaved..  We went to pick Saundra up at work and she got to meet a lot of my co-workers..  then we shopped for ingredients to make cookies and some Dinosaur Chicken Nuggets and Organic Mac and Cheese for lunch..  we came home and made cookies..  she was so funny,  standing in a chair, then helping put the ingredients in the mixer and turning it on..  she catches on so very fast..  :)  she can count and she knows her abc's..  she talks up a storm.. lol..  not sure where she gets that..  never a dull or boring moment when she is around.. She is now napping on my bed.. you just lie her down with a stuffed baby or animal and cover her up and she goes to sleep.. I am blown away by her..  The cookies we made smelled yummy while baking and are very yummy..  a recipe that I will definitely be tweaking,  they didn't spread a lot.. so maybe double the recipe and cut the flour part some..  not enough oatmeal texture for me..  :)  Here is the recipe as it was written:

Oatmeal Cranberry White Chocolate Cookies

2/3 cup butter or margarine, softened
2/3 cup brown sugar
2 large eggs
1 tsp vanilla
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 6-ounce package Ocean Spray® Craisins® Original Dried Cranberries
2/3 cup white chocolate chunks or chips

In a large mixing bowl cream the butter and brown sugar until fluffy,  add the eggs 1 at a time and mix well after each,  add the vanilla and mix well.  Add the oats and mix well,  then add the flour, baking soda and salt,  mix well,  stir in the cranberries and white chocolate chunks or chips..  drop by rounded tbsps on a greased baking pan and bake at 350 degrees for 9 minutes.  let cool and then remove to a cooling rack.. store in a airtight container.     Makes about 3 dozen cookies. 

I think next time I am going to add a little orange zest and double everything except the flour and just put in 2 c..  would be good with walnuts also..  :) 

For dinner I am roasting a chicken with carrots, onions and celery, making mashed potatoes and a salad!!..  love this time of year..
