I created this Blog because many of my friends wanted recipes for many of the things that I cook and or bake in my kitchen. I work full time and am usually stressed and extremely exhausted when I get home from work, but cooking relaxes me. There isn't anything more soothing to me than cooking something and sharing it with the people that I love.. be it family or friends.. :)

What's For Dinner Tonight!!!
I noticed how dark it is outside and was thinking it was later than 6:11 pm..
So what is for dinner tonight?? Something totally not planned.. but requested from the BekahBoo.. Cajun Chicken, Cornbread Casserole and a Salad with mixed greens, Walnuts, Apples and dried Cranberries.. yummy!!!!
Cajun Chicken
1/4 to 1/2 c. All purpose flour
Poultry Seasoning
Garlic Powder
Paprika
Cayenne Pepper
Cajun Seasoning
Salt and Pepper
3 to 5 boneless, skinless chicken breast
4 Tbsp. melted butter
Mix flour and seasonings together in a bowl.. coat each breast with mixture and put in a 9x13 baking dish with 2 Tbsp of the melted butter.. pour remaining 2 Tbsp butter over top of chicken and place in a 350 degree oven for 30 to 45 minutes
Cornbread Casserole
1 can whole kernel corn, drained
1 can cream style corn
1 pkg corn muffin mix
1 egg
2 Tbsp melted butter
garlic powder
paprika
In a large bowl combine all ingredients. Pour into a greased baking dish. Bake uncovered in a 350 degree oven for 30 to 45 minutes until golden brown and cooked through..
I usually double this recipe
Salad
Mixture of salad greens(whatever you like)
2 honeycrisp apples, diced
1 c. walnuts
1 c dried cranberries
salad dressing of choice.. I used Poppyseed..
I hope everyone who tries these recipes enjoys them.. They are pretty easy.. not very time consuming and convenient for a weeknight..
Hi, My name is Nina, and I am crazy!!!!
So, I cleaned my refrigerator out so that I could have room for Mr. Gobbles and as I am rearranging things in my freezer I realize that I have an abundance of frozen peaches, mango and berries.. so I pull them all out and dump them into a huge stockpot, add about 1 1/2 c. sugar, 1/2 c. all purpose flour, the zest and juice of 2 oranges and 1 lemon, cinnamon, cloves, nutmeg and ginger and I let it simmer until it thickens up.. it smells yummy.. Then while that was simmering I made a crust.. about 2 1/2 c all purpose flour, 1/2 c sugar, 1 tsp salt, cinnamon and 1/2 c butter.. I mix all that together well with a fork until the butter is mixed in well with the flour mixture.. then add ice water until a soft dough forms.. I turn the dough out onto a floured surface and knead it, then divide it in 2 pieces, roll out 1 for the bottom of a 9x13 pan.. I press it in and partially up the sides and put it in a 400 degree oven for 15 minutes to bake it a little.. then pull it out.. pour the fruit mixture over and put the top crust on.. brush with an egg, water mixture and then sprinkle with sugar and cinnamon and bake for 30 to 45 minutes until the filling is bubbly and the crust is golden brown.. :) So I guess we are having dessert tonight..

Good Morning everyone!!!
I feel like I have abandoned you all!!! This being sick is for the birds, especially when you have things that need to get done.. It was a crazy week and now I am ready for a new crazy week!!!
I did have a great Friday evening with my Boo!! She cleaned the carpets for me Friday and they looked amazing, so I treated her to Chinese at our favorite place.. Lucky China in Kennesaw off Cherokee Street.. I highly recommend it.. great food.. most of their business is take out and delivery, but I love going in and relaxing with a pot of hot tea and then as I told Rebekah when we couldn't eat anymore.. I feel as stuffed as a Build A Bear!!! We both had the Wonton Soup, and of course the Eggrolls.. YUM!!!! we ordered 2 entree's, Sweet and Sour Chicken, yes I did say chicken.. my Boo is venturing into the meat world again, or I should say the chicken and poultry world... so far she is good.. no sickness.. and we ordered the Lemon Chicken.. with the fried rice of course.. OMG.. it was so very yummy!!! I think I could eat Chinese food every day.. Since Saundra was working we decided to be nice and we ordered her some Hot and Sour Soup and an order of Eggrolls.. and there was plenty of the rice and entree's left..
After we ate we went to Kohl's.. Boo found some really nice Christmas gifts.. She did an amazing job.. then we went to Target and bought Nik his first family ornament and a stocking.. I got a new Christmas throw and a huge mug.. I love them both.. lol.. I also took care of Nik's Christmas presents.. 1 down, hundreds to go.. not really.. I have already gotten my little buttercup some stuff.. just need to get her a few more things and then my kidlets.. working on one for my son and his wife.. I need to get it finished.. Have to take pics of Thanksgiving foods so it will have pics too.. :) Once I get everything written down, it will be easy to finish.. just need to get on that.. Maybe I can work on it some today!!!
Friday after we left Target it was around 9:30, to late to really go home, so we went to steak and shake, Rebekah got a milkshake and fries, I got a milkshake and coffee.. lol.. I know interesting combination.. I got the Double Chocolate fudge shake and Rebekah got the Mint Chocolate Chip.. Nik met us there.. he is such a good kid.. He is good for my Boo!!! He is very attentive to her..
OK, have lots to do today.. but I promise that I will post a couple recipes.. I am cooking dinner tonight.. Cajun Chicken, Cornbread Casserole and Waldorf Salad.. Then the girls and I are going to have a movie night.. :)

Happy Thursday!!!!
Good Thursday Morning!!! It is going to be a great day!!!
One of my Target children Chad and his new bride are moving next week and I am throwing him a going away, congrats on your wedding party.. I am going to miss him. He has been a great "son" to me... I just hope I don't cry.. I have been busy cooking for them and I hope that they have a great time.
I made probably the best marinara sauce ever yesterday.. I was so impressed and I just did it.. like most everything else I cook... I don't measure anything I just throw it all together and hope it comes out well.. but I did put a little extra splash of love in it.. then I put together a huge Lasagna.. it has about 4 lbs of cheese in it.. 2 lbs of mozzarella, 2 lbs of cottage and then 8 oz of Parmesan.. wow.. it is big though.. I have to get it in the oven soon to start baking low and slow.. I hope it tastes as good as the sauce.. it was the best sauce ever!!!!!
The cake.. ahh, what can I say about the cake except that as I was letting the first coat of frosting set on it, it split right down the middle, but instead of having a major panic attack over it, I fixed it.. you can't really tell.. it is gorgeous.. a triple chocolate fudge cake with a raspberry filling, a cream cheese frosting with orange zest and chocolate covered strawberries on top.. There is a bride strawberry and a groom strawberry!!!! :) I can't wait for them to see it all.. I will take lots of pics for my blog..
Still have bread to do.... going to split it down the middle and spread it with a garlic herb butter and sprinkle it with some parmesan cheese and then bake it in the oven and let it get crusty.. then off to the park we will go..

Sweet Potato Casserole
Sweet Potato Casserole
3 c. mashed sweet potatoes
1/2 c. milk
2 eggs, beaten
1 c. sugar
1/2 stick butter, melted
1/2 tsp vanilla
pinch of salt
Beat all together and pour into greased 9x13 pan
Topping
1 c brown sugar
1.2 c flour
1/2 c. pecans, chopped
1/3 stick butter, melted
marshmallows
Combine 1st 4 ingredients until crumbly, spread over top of sweet potatoes. Bake 350 degrees for 35 to 40 minutes. Top with marshmallows and put back in oven to brown... about 5 more minutes..
This is great to do ahead. It gets better as it sits in the fridge waiting to be baked off in the oven. The topping is better when it has sat in the fridge.. and gotten firm..

Hello everyone, I hope all is well.. I have been a little under the weather and trying to rest as much as possible after work. The chicken noodle soup was so very good.. It just got better as the days went by. There is a tiny bit left.. it might be my lunch today!!
I have a lot to do today and tomorrow... I can't say why, because who I am busy for might read my blog and that would blow the surprise, but be patient.. I will take lots of pictures and post them.. It involves me being in the kitchen a bit though.. :) My favorite thing..
I will post another recipe for Thanksgiving today.. are you ready?? I basically am, just need to make out my schedule for when I am going to do what.. this weekend I will be doing some cleaning and making pie crust and baking my sweet potatoes for the casserole.. will also clean out the fridge and take the turkey out of the freezer and let him start thawing in the fridge..
I started my Christmas cookie list today.. I can't wait to smell the gingersnaps cooking.. probably my favorite cookie ever.. I also mentally preparing for the Christmas eve dinner, Christmas morning breakfast and Christmas dinner menu's and the ingredients that I will need.. What a wonderful time of the year.. I am already in the mood for Christmas music!!! Hehe.. maybe as I am in the kitchen today I will listen to it.. hehe.. operation hide the remote so mom can listen to Christmas music is on!!!!!!

Chicken Noodle Soup
Chicken Noodle Soup
3 chicken breast, boneless, skinless
8 c. water
salt and pepper.
Place chicken in a large stock pot and cover with water, add salt and pepper. Bring to a boil and simmer for about an hour. Remove chicken and keep the broth for the soup.
1 onion, chopped,
4 stalks celery, diced
4 carrots, diced
8 oz mushrooms, cleaned and sliced
3 to 4 cloves garlic, minced
1 Tbsp parsley, chopped
1 T sage, finely chopped
1 T. rosemary, chopped
1 box vegetable broth
whole wheat egg noodles or any type of pasta that you prefer.

Cook onion in 1 Tbsp olive oil, add celery, carrots, mushrooms and cook for 5 minutes, add the garlic and herbs and cook another minute. Add the vegetable broth and cook for a few minutes, add the chicken broth and simmer for about 30 to 45 minutes, season with salt and pepper. shred the chicken and add to soup. simmer for another 15 minutes, then add the noodles and cook for 5 to 7 more minutes.
