Wonderful Saturday!! (Cheesy Baked Mashed Potatoes, Pumpkin Donuts)

It has been a pretty full 3 days for the girls and I..  We went to the NCHS Homecoming Parade on Thursday evening..  so different than when I was in school..  but that has been 20 something years..  yikes!!!  lol   Then last night we went to the Homecoming game and had so much fun..  I hadn't been to a game in a very very very long time..  lol..  Sadly the Warriors lost,  but their band is amazing..  after we went to IHOP and ate and then we all came home and crashed..  Today was a lot of running around and errands..  then came home and cooked dinner..  Fried Chicken, Cheesy Baked Mashed Potatoes, Fresh Green Beans, Sauteed Mushrooms and Toasted Onion Rolls.. so yummy..  and Rebekah and I just finished making Pumpkin Donuts..  very easy recipe..  will definitely be making it again,  and will probably double the recipe next time.. 





Cheesy Baked Mashed Potatoes

Leftover Mashed Potatoes
butter, melted
sour cream
cheddar cheese,

Mix all together, use 1 c cheddar cheese, and put in a cassarole dish..  cover with 1/2 c cheese and bake in a 325 oven for 20 to 30 minutes..




Pumpkin Donuts

2 c flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp pumpkin pie spice
1/4 c brown sugar
1/4 c sugar
2 tbsp butter, melted
1 egg
1/2 tsp vanilla
1/4 c milk
1/2 c pumpkin
oil for frying

In a bowl mix all the dry ingredients.. set aside.  Cream the sugars and butter,  add the egg and vanilla,   Add the flour mix and milk and pumpkin alternately..  mix until a soft dough forms..  You will need additional flour to knead the dough..  pat out into a circle and roll to 1/4 to 1/2 inch thickness..  cut with a doughnut cutter or improvise.. I used a biscuit cutter and a shot glass..  keep re-rolling dough until you run out..  fry in oil that is 350 degrees for 2 minutes on each side..  when done roll in powdered sugar, cinnamon sugar or make a powdered sugar glaze..  store in an airtight container..
