What an amazingly beautiful day!!! So very gorgeous and it is still light outside.. I will get over losing sleep.. because it was so beautiful..
Had a great day at work.. got a lot done today.. have a lot to do tomorrow too.. woohoo watches..
So I got home and changed out of my work clothes and chilled for a minute then went into the kitchen and did a little cleaning.. then started dinner.. Cajun Chicken Pasta.. brand new recipe..
Cajun Chicken Pasta
1 pkg fettuchini, cooked according to pkg directions
2 Tbsp Olive oil
2 Tbsp butter
3 chicken breast, cut into 1/2 inch pieces
3 to 4 tsp. Cajun seasoning
1/2 red onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
5 cloves garlic, minced
4 roma tomatoes, diced
1 1/2 c chicken broth
1 c heavy cream
cayenne pepper or red pepper flakes
salt and pepper to taste
In a large saucepan heat 1 tbsp olive oil and 1 tbsp butter over medium high heat.. coat chicken pieces with 2 tsp of the cajun spice.. then cook the chicken until dark brown and cooked through, remove to a plate and put in another tbsp olive oil and butter.. throw in the bell peppers, onions and garlic and another 2 tsp cajun seasoning.. cook on high heat for about 2 minutes, then add the tomatoes and cook 3 seconds.. remove to another plate, add the chicken broth and scrape up all the yummy bits off the bottom of the pan, cook about 10 minutes over high heat until reduced by half.. then lower the heat and add the heavy cream.. stir and cook for about 5 minutes until it thickens, add cayenne pepper or red pepper flakes, black pepper and salt.. add the chicken and vegetables back in.. stir and then toss in the pasta.. stir well until the pasta is coated.. serve immediately..
This is good.. but I think I could play with it and make it better.. to me it wasn't spicy enough.. I love spicy food.. I wasn't a fan of the tomatoes, I would probably use some sugar snap peas next time instead.. and I would probably marinate the chicken in the cajun seasoning and some hot sauce.. and maybe instead of using fettuchini maybe use rigatoni, that way the sauce could seep into the middle of the pasta.. will definitely make it again, and will definitely make a few changes until I think it is yummylicious.. :)
