I love Sundays!!! Especially when I am off work.. and today is extra special!!!
Tiffani got her new liver, she is in ICU and is doing well.. .. What a praise for her.. I am praying for the donor's family.. so hard..
I know after the fire we donated what we could of Jo's and the kids organs, Someone got my sister's eyes, and I would love to be able to look into those eyes again, just one more time.. It's amazing how much you can miss someone.. But I am so thankful for families who give others a chance at life through organ donation.. I am an organ donor and proud of it.. and all of my children are also..
Today on the agenda after dropping Saundra off at work; BekahBoo and I are going to soak up some sun at Acworth Beach for a few hours... not sure after that, we will see.. :) I also found a new recipe I want to try.. it looks and sounds yummy.. will just have to pick up the ingredients before heading out.. when we drop Saundra off.. :) But for dinner tonight, it is going to be something simple, something we haven't had in a very long time, but thought, ahh, why not.. we are having hot dogs, chili and cole slaw with a side of fries.. I bought the frozen crinkle ones, but I might make my own and roast them in the oven.. we shall see.. :) would be a perfect day to try out a new dessert recipe.. and it is no-bake.. guess I need to get an ingredient list together... :)
Rebekah and I dropped Saundra off at work, ran in and got the ingredients for the pie and off we went to Acworth Beach.. what a glorious day out.. beautiful blue clouds, the sun, high in the sky.. so we pick a nice spot, spread out our blanket and start soaking up the sun, it was so quiet when we first got there.. then we start noticing lots of really attractive men coming onto the beach, some with families, some without.. so we had the glorious sun, sand and water and something to look at too.. we stayed for about 2 hours, turning ever so often and finally spent the last 30 minutes just people watching.. There was a point where I wanted to get up and walk over to this asshole and smack him.. what a jerk.. he and his family I guess get to the beach and immediately he starts in on the woman.. why didn't you bring so and so, where are the batteries.. it takes 8 not 4, you should have looked and then when she said.. I thought it was 4.. he said.. that's your problem, you shouldn't have been thinking.. omg it took everything I had to not go shove sand in his mouth.. arrogant ugly bastard.... sorry, that is one of my biggest pet peeves, is a man treating a woman with no respect.. NONE!!! if he wanted the batteries.. then he should have checked and made sure it was the right amt..... grrrrrrrr so we get home.. we both take cool showers and then realize how red we are.. lol.. but I'm not hurting.. yay!! so in a couple of days I will be darker and by Wednesday we can do it all over again, without the arrogant ass please..
Rebekah is off with Stephy.. my adopted daughter.. and I finally got in the kitchen and made the pie.. which when they found out I was making it they told me they would be home for dinner.. lol.. love those girls..
No-Bake Nutter Butter Nutella Pie
Crust:
24 Nutter Butters, crushed
1/4 c butter, melted
Mix together and press into the bottom and up sides of a 9 inch pie plate..
Filling:
2 8 oz pkgs cream cheese
3/4 c sugar
1 tsp vanilla
1/2 c Nutella
1/2 c heavy whipping cream
Beat the cream cheese in a mixer until smooth, add the sugar and beat for about 5 minutes until sugar is dissolved in the cream cheese.. add the vanilla, Nutella and Whipping Cream.. whip for 3 minutes until thick.. scrape down the sides of the bowl and whip again for about 2 minutes.. pour into prepared crust and let sit in fridge for 2 hours..
Ganache:
1/4 c Nutella
1/4 c heavy cream
Microwave Nutella and Cream together until thin.. pour over the pie..
Coleslaw
1 pkg prepared cole slaw mix
mayonnaise
lemon juice or vinegar
sugar
salt and pepper
Put the mix in a large bowl, mix the mayo, lemon juice, sugar, salt and pepper in a small bowl and pour over the mix.. stir until coated adding more mayo if needed.. refrigerate until ready to eat.. I LOVE cole slaw in the summer time.. yummy...
